Method
- Preheat oven to 400 deg. F.
- Spread the julienned carrots evenly on a baking sheet.
- In a small bowl, mix the oil, garlic, salt, pepper, and ginger. Drizzle the mixture over the carrots, tossing to coat evenly.
- Roast in the oven for 20 minutes, tossing every 10 minutes for even cooking.
- Reduce the heat to 350°F and continue roasting for an additional 15 minutes, or until the carrots are tender.
- Serve warm and enjoy!
